Answer: diastase

The bacteria can utilize starch as an energy source. But for that, it has to break down the starch into glucose molecules so that it can enter into the bacterial cell for further metabolism. To do so, it releases the exoenzyme that hydrolyzes starch into glucose monomers.

Caesinase is a protease that hydrolyzes the protein caesin. It does not hydrolyze starch which is a carbohydrate.

Gelatinase is another protease that hydrolyzes gelatin into its sub-compounds. It does not hydrolyze starch which is a carbohydrate.

There exists no enzyme by the name lactomase reported in scientific literature. However, there is an enzyme called lactamase that hydrolyzes the beta-lactams of penicillim. It does not hydrolyze starch.
