From Micheal menton enzyme kinetics we have

V = V mar Sl/Km + S

Where mar Kcat ET

Kcat is turn over number

[E]T is total enzyme concnetration

The parameter that is used to describe how well a catalyst works is known as catalytic efficiency =Kcat/Km

Triphosphate isomerase is considered way better than pepsin because Km value i.e concentration of substrate required to reach half of maximumvalue is very less for triphostphate and very low quanitty of it catalysis the reaction to significantly higher extent making its catalytic efficiceny very very high than pepsin.
