Flour contains starch which is a polysaccharide and colourless compound can be detected by various tests of which iodine test is easy and mainly performed.

When drops of iodine- Kl solution is added to the flour, it will cause a reaction with the starch and a blackish blue colour will be produced, indicating the presence of starch. Therefore, flour can be detected. If the reaction doesn't cause blue black colour change, then the tested sample will be sugar.
