Optimal temperature is a temperature at which a procedure or an enzyme works at its best.
Organisms have different optimal temperature because there are two types of organism i.e. warm blooded and coldblooded animals.
Warm-blooded organism, like mammals and birds, keep their bodies at a constant temperature. Cold-blooded organism take on the temperature of their surroundings. So their activity changes based on temperature and they have different optimal temperature.
