Ans B option , entropy decreases and ∆G increases

As the hydrophobic tail of fat or oil eliminates water that cause removal of unfavourable interection between polar and nonpolar molecule and hence stability increases and hence degree of randomness decreases which is represented by entropy so finally entropy decreases.

For ∆G which is Gibbs free energy and for stable reaction or unfavourable reaction ∆G will be positive so since overall system move here toward stablity so ∆G will be positive.
