Ammonification is the process by which bacteria convert organic nitrogen to ammonium. Ammonuim can then be oxidized to nitrate by nitrification. But not only nitrogen ammonification also refers ro the conversion of NH2 containing groups into ammonia or ammonium ions. Urea, uric acid and organic nitrogen of faeces of animals, all are substrate for ammonification.
Water is the reducing agent as it donates the lone pair of electrons to the NH2 containing compound and is getting oxidized while the compound is the electron acceptor, thus getting reduced to acid and carbon dioxide.
