A. Fermentation if an enzymatic process. If we increase the number of enzyme molecules, then the rate of fermentation will increase. This is because more enzyme molecules will be available for binding to substrate and then converting them into product. But this will increase up to a certain limit after which it will become constant. This is because the number of substrate molecules will become limiting due to which there will be no increase in the rate of reaction even if the concentration of enzyme is increased.

B. The rate of alcohol fermentation can be decreased by decreasing the concentration of substrate. This will decrease the number of free substrate molecules present in the medium for binding to enzyme. As there will be less number of substrate molecules, less enzyme substrate complexes will be form and less amount of substrate will be transformed into product.
