From the above data, one can see the effect of additives on anthocyanin denaturation. in the table, the additives distilled water and 0.1M Nacl have no effect on additives. These additives are different from other additives as distilled water has no chemical which can have any effect on anthocyanin. similarly 0.1M Nacl is the salt solution at low concentration.

These additives exhibit differences in their potency in denaturation of anthocyanin. from the data, you can see heat completely denatures the anthocyanin as immediate loss of blue colour occurs.

similarly only 3 drops of bleach denatures it.

only 5 drops of detergent denatures it.

8 drops of 1.0 M NaOH denatures it.

10 drops of 1.0 M HCl denatures it.

20 drops of isopropanol completely denatures it.

20 drops of methanol reduces the colour which means more methanol is required to denature it.

20 drops of 0.1M zncl2 also denatures but not fully.

from this data you can get the idea of potency of these additives
