First of all, Defensins are protein crystals that are found in animals (vertebrates and invertebrates) and some plans which work as host defences against fungi, bacteria and some virus. They can be secreted by neutrophils or macrophages which are a part of WBC section of your blood.

Now about the hypomorphs NOD 1/2 can create inflammation in the small intestine of Crohn's patients as it functions in defence of the intestinal epithelium. And in crohn's disease, frequent aberrations leads to a permanent inflammation in the intestine. So, remember, the more the infection on a particular site, the more the inflammation.
