Digestion of di- and polysaccharides is done through the process of hydrolysis , but requires the presence of a special enzyme, which does not get consumed in the process. The di- or polysaccharide which is split in the process is called the Starch.

e.g, we, the human digest polysaccharides by hydrolysis with the help of Salivary Amylase (an Enzyme).

Starch is that type of polysaccharides which our digestive system can break into monosaccharides, on the other hand Cellulose are the type of polysaccharides , which can not be hydrolysed in our body, as we dont have the enzyme to digest that.
