Oleic acid2.by considering above structures the coconut oil has high melting point because ,it contains lauric acid 48% and palmitic acid 9.5% i.e.total of 57.5 % of saturated fatty acids.
It contains myristic acid 16 % and oleic acid 6.5% i.e.total of 22.5% unsaturated fatty acids,because myristic and oleic are unsaturated.
The melting point of saturated fatty acids is higher than that of unsaturated fatty acid.
Coconut oil contains higher amount of saturated fatty acid therefore have high melting point.
