Food fortification is the process of adding micronutrients to food.

Examples:

1) Niacin: Niacin has been added to bread . Niacin is added to prevent many diseases like pellagra , vascular or gastrointestinal diseases.

2) Folate or folic acid : Folic acid is added to flour in many industrialized countries.It is added to prevent defects like neutral tube defects etc.
