Saponification is a process of conversion of triglycerides into fatty acid and glycerol which is also known as soap.

Chemical reaction between fat and sodium hydroxide is known as saponification reaction .  

Soap and detergents are made up of two portions which are are lyophilic and lyophobic . Lyophilic portion is soluble in water whereas lyophobic portion is soluble in organic contaminants which is used to clean the organic debris .
