Food safety :

  • Food safety discipline describing handling ,preparation and storage of food in ways that can prevent food borne illness .this include a number of routine that should be followed to avoid potentially severe health hazards .
  • If foods are not preserved in some way ,they will deteriorate or go Off .

Causes of food spoilage :

  1. Fruits and vegetables spoil over time because of the presence of enzymes .these are chemicals that occur naturally in food and causes it to ripen and eventually decay .
  2. Bruising is caused by the releases of enzymes when a fruit is damaged and this speeds up the rate of decay
  3. Spoilage may also caused by micro organisms such as moulds ,yeast and bacteria .
  4. These cause the food to break down ,For or go sour
  5. The food may then discolour and smell bad or sticly and slimy .

Food poisoning :

  1. Food poisoning is an illness caused by ingesting food or drink which has beed contaminated by large number of pathogenic bacteria .
  2. The symptoms are stomach pain , nausea ,diarrhea and vomiting .

Food guidelines :

Food hygiene :

  • Maintain a high standards of personal hygiene .
  • Wash the hands before handling food and after handling rubbish ,using a tissue ,using the toilet or handling pets .
  • Cover or the back hair and wear a clean apron
  • Handle foid as little as possible .
  • Avoid touching face or hair while preparing food
  • Keep fingernails clean and short .do not wear nail varnish .
  • Do not cough and sneeze over food
  • Avoid wearing rings ,watches while cooking .
  • Kitchen should be well designed with adequate lighting and ventilation.

Food storage :

  • It is essential to store food properly to ensure that it remains in prime condition For as long as possible .
  • Protect food from flies and that .
  • Ensure that the kitchen is clean and well organised.
  • Store foods correctly according to their type
  • Note the best before and Use by dates on perishables .
  • Use up older foods before opening new ones .
  • Store food away from cleaning agents .
  • Keep cup boards and storage containers clean to prevent contamination by bacteria .
  • never refreeze thawed frozen food .
