triglycerides are made of three fatty acids and one glycerol. saturated fats have no double bonds. mono-unsaturated fat has one double bond. polyunsaturated fat has more than 2 (many) double bonds. saturated fats are saturated with hydrogen.

saturated fats tend to be solid at room temperature and are more stable and less subject to changes. the bonds in unsaturated fats make them more liquid at room temperature. saturated fats are found mainly in dairy foods. they are frequently called solid fats. two examples of plant foods that are high in saturated fats are coconut oil and palm oil.

monounsaturated fats are found in nuts and vegetable oils. they are beneficial because they help lower cholesterol level. a good source of polyunsaturated fats is salmon, nuts, seeds, and vegetable oils. the omega number refers to the position of methyl bond in fatty acid. omega 3 and omega 6 are essential in human nutrition. nuts are a good source of omega 3 fats and dairy products are a good source of omega 6 fats. the typical American diet is higher in omega 3 fats than omega 6 fats.
