Proteins are denatured , that is, their secondary structure is destroyed when they are subjected to heat. Here, in the given three cases, there are different reasons for the different observed results. When egg albumin is heated, its secondary structure is destroyed and the hydrogen bonds get broken. This leads to denaturation. Glutamic acid is more thermally stable and requires more heat to be denatured. Hence, the solution is clear because it is not denatured in the heated temperature. Its secondary structure is intact. When egg albumin is added to alcohol, they both tightly bind to each other. Alcohol dehydrates the protein. Hence, the change observed is different.
