3. Salivary amylase is an enzyme present in saliva that breaks down starch to maltose. Its optimum pH is 6-7 (around 6.9). The pH range for salivary amylase is 5-9. Thus, they are most active near neural pH.

Arginases are enzymes that are active at alkaline pH. Their pH range is 6-12, with an optimum pH of 9.5. Arginase hydrolyzes arginine in water to form ornithine and urea and is the final enzyme in urea cycle.

Pepsin is an enzyme active in stomach and is active at low pH. It breaks down protein to peptides. Its optimum pH is 1.5-2. It is active at a pH range between 1-4.
