Anhydrous MgSO4 is used to dry ether layer to allow better handling. If we did not use anhydrous MgSO4 our product could ionize.

or

after completion of grignard reaction, we have added ether to dissolve the product to seperate it from all the inorganic substaces. At that point the ether has a little dissoved water in addition to the product. If we evaporate the ether to recover the product there willl be moisture in whatever solid or liquid it is. Moisture may hydrolyse the product during the heating needed to recyrstalise or distill it. Anhydrous MgSO4 absorbs moisturenform the ether without reacting any thing.
