Phospholipids.

These are made from glycerides where one fatty acids is substitue by a phosphate group. Phospholipds have both hydrophilic (phosphate group end) and hydrophobic (hydrocarbon tails of the fatty acids) end, making it soluble in water in one end and soluble in oil or fat in the other end. They serve as emulsifiers.
