The mucosal cells in the stomach are not responsible for the absortion amino acids from digested food.

Generally amino acids are absorbed in intestinal region.

Mucosa :It is the innermost layer lining the lumen of the alimentary canal. Mucosa of the stomach forms irregular folds called gastric rugae in between which there are many microscopic gastric glands. The mucosa of small intestine forms small finger like folds called villi. The columnar epithelial cells that lins villi produce numerous microscopic projection called microvillo giving brush border appearance. These modifications increase the surface area of absorption. Mucosal epithelium has goblet cells which secrete mucus, that helps in the projection of the wall from the action of enzymes,. It also helps in the lubrication of passage of food.
