According to this philosophy, eating acidic foods "acidifies the blood," leading to disease. But our blood has several buffer systems in place. When the food is acidic; there is increase in the hydrogen ion concentration in the blood.But the bufferd ensure that the blood pH does not change.The most important buffer system is the bicarbonate buffer system.
HCO3- + H+ -------> H2CO3
H2CO3------> H2O + CO2
So pH of the blood remains unaltered.
There are other buffers like plasma protein buffer.In long term ; the kidneys excrete more H+ and reabsorb more HCO3- to maintain the normal blood pH.
