7. Amylopectin is a highly branched molecule (about once every 20 to 25 glucose units) with shorter α-1,4-linked glucose molecules and more frequent α-1,6 branches. Cellulose is a high-molecular weight polymer and insoluble and hence it is usually chemically modified and converted into derivatives to make it more processable.

8. Galactose is a monosaccharide. When combined with glucose (monosaccharide), through a condensation reaction, the result is the disaccharide lactose. The hydrolysis of lactose to glucose and galactose is catalyzed by the enzymes lactase and β-galactosidase.

9. Like glucose, maltose is a reducing sugar, because the ring of one of the two glucose units can open to present a free aldehyde group; the other one cannot because of the nature of the glycosidic bond. Maltose can be broken down to glucose by the maltase enzyme, which catalyses the hydrolysis of the glycosidic bond.
