The absorbance thus brown colour is increased with heating time but the fold increase is more in more pH.

Increase in pH increases the absorbances.

Fructose and glucose makes brown colour in slower rate both similarly but glucose is little fastly.

Amino acids increased the brown colour development as you can see when you will see that lysine with glucose or fructose increases more brown colour development.
