In this case, that assumption is completely false. In fact, all the enzymes and natural proteins in every food are degraded during the digestion of proteins. Starting in the mouth, when we chew, we are mechanically breaking the the proteins. After that, in the stomach the proteins are digested by the action of pepsin and HCl, converting all the proteins and enzymes of the mushroom in polypeptides. In the small intestine, these polypeptides are also digested by pancreatic enzymes, giving as a result amino acids and small peptides. Finally, the mucosal cell will take these peptides and convert them into amino acids.

As you can see, there is no way that an enzyme that comes from the mushroom remains intact and functional during the process of digestion.
