Beef - View external surfaces. View the oral and nasal cavities.

Head inspection - Retropharyngeal, parotid and submaxillary lymph nodes are viewed and incised by multiple incisions. The bronchi should be opened up by a transverse incision across the diaphragmatic lobes.

Lung inspection - Open trachea and incise bronchial and mediastinal lymph nodes.

Sheep - Inspection procedures for adult sheep consist of a visual examination of the dressed carcass, viscera and head. In addition, the lungs, heart and liver should also palpated.

The retropharyngeal lymph nodes must be incised and mesenteric lymph nodes shall be observed. In addition, the bronchial, mediastinal, hepatic, and superficial body lymph nodes are to be visualized and palpated.

Swine - The inspection procedures for swine are as follows:
1. Observe head and cut surfaces – the eyes, fat, cheek muscles, and other tissues for abnormalities.
2. Incise and observe the right and left mandibular lymph nodes.
3. When abnormal conditions are noticed, retain the head for disposition.

4. Observe the back, front parts and the inside of the carcass.
