Why the back transformed data for the log transform does not give you the same raw data?

This mostly happens because taking log transform will change the distribution of the data. Sometimes it is used to make the data normal , to suit for application of operations. But in doing so, the distribution of points is changed and it becomes difficult to map them back to original data.
