Male hummingbirds are usually bright and have various colours to attract female hummingbirds. The different colours are the result of prism like cells which are located at the top of the humming bird and the pigmentation of the feathers. The changing colours are due to the combination of pigmentation and refraction. The cells in the feathers act as diffraction grating. Therefore just by changing position, the humming bird would seem as if its changing colour from dark green to red.

One example to understand this concept would be oil in water would have various colurs when sunlight falls on it.
