Suppose you could isolate a few cells from your body and put them in a water bath like you did with the model cell. Would they swell up and possibly lyse each time you drink water?

Cells in our body work as a coordinated system. If there is any change in the surrounding environment, they elicit a collective response to maintain homeostasis. So, if there is any change in the osmolarity of the surrounding media, cells activate certain transporters and inhibit others so that the osmolytic integrity of the cell is maintained.

This does not hold true in the case of isolated cells. They can not maintain their osmotic potential. Since pure water has low osmotic potential, it enters isolated cells by endosmosis leading to cell burst. But, our cells in the body do not lyse when we drink water.
