The pKa of acetone = 4.74

(pKa)acetic acid >> (pKa)acetone

i.e. Acetic acid is more acidic than acetone. So, the solution of acetic acid in acetone behaves as an acid.

In general, an acid will be quenched by adding it slowly (in a dropwise manner) in water.
