5. the structure which has more H atoms and has only single bonds are saturated fats, this saturation also tend to make them more dense and hence longer linear chains cause them to have high melting point. whereas the unstaurated fats have double covalent bonds which are represented by double lines in the structures, these structures can be bent; these also have lower melting point. the one that has single double bond are called mono-unsaturated fats and which has multiple are called poly-unsaturated fats.

the unsaturated fats are liquid at room temperature, these are usually found in plants like olive oil.

6. converting the unsaturated fats into saturated ones via a process called "hydrogenation." This process rearranges the molecular shape of the unsaturated fats. trans fats are also created by hydrogenation which are bad for health.
