Capacitive type pressure sensors are widely used to determine the pressure applied. It consists of two parallel plates with som gap between them. Capacitance is given by : C= Ac/d where, A is the area of the plate, \epsilon_0 is the permittivity of the material between the plate and d is the distance between the plates.

Voltage developed is given by V Q/C Qd Ac

When the plates is pressed the distance between the plate is changes ie. reduced which causes a voltage change.This change in voltage is measured. SO we can tell that applied pressure is directly proportional to output voltage which is directly proportional to distance between the plates.
