Answer: Restriction enzymes

Explanation:

Restriction enzymes are the enzymes used to cleave or cut the DNA at the specific sites to get the fragments of different size. These enzymes are actually the defense mechanism of the bacteria which is used to protect them from the phages. When the phages insert their DNA, these bacterial restriction enzymes cut them and make them inactive.

There are four types of restriction enzymes which is classified based on the recognition sequence, cleaving position etc. These enzymes frst recognise a specific sequence and make cut between specific nucleotides at the same site or near the site or away from the site on both the strands.

So these enzymes are used to make fragments of various sizes in this case.

Heat can denature the DNA but it cannot make fragments by cleaving or cutting at specific sites. DNases are the enzymes which are used to degrade the DNA. It is mainly used during the RNA isolation in order to get RNA free from DNA.
