Distinguish between the structure of saturated and unsaturated fatty acids and describe why saturated and unsaturated fatty acids have different melting temperatures

Answer -

Structurally the difference between saturated and unsaturated fatty acids lies in the presence and absence of single or double bond carbon chain. Saturated fatty acids have carbon chain containing only single bonds(C-C) while the unsaturated fatty acids might have double bond among the carbons(C=C).

Saturated fatty acids have a straight chain while the unsaturated fatty acids may have bends inside the chain.

Their melting temperature can also vary, as the forces present between the carbon chain of unsaturated fatty acids is weak which results in the lowering of melting temperature than saturated fatty acids. This is the reason of unsaturated fatty acids remain liquid at room temperature.
