Design an experiment to determine the optimal temperature for enzyme function, complete with controls. Where would you find the enzymes for this experiment? What substrate would you use?

Try potato catalase, which runs the reaction of the reduction of hydrogen peroxide to oxygen and water. The substrate for catalase is hydrogen peroxide.
Just cut up a potato, and immerse it in hydrogen peroxide, and it begins to fizz as oxygen is produced.

The best enzymes you should use is kinoallase, which is both easy to obtain and use. It's been widely studied by scientists, and has an optimal temperature range from 12 degrees celsius to 81 degrees, a 69 degree range. There are actually two different substrates that work best with kinoallase. They are formaldehyde and nitrogen triiodide . For controls, you could use the deactivated form of it, known as phenoallase, which is activated when it reacts with human semen. To buy some, ask for it at Walgreens or CVS. It's also known as Rohypnol, or "roofies" in street parlance.
