What is the purpose of adding water after cooling the reaction mixture in this experiment?

I understand it is to precipitate the product, but what exactly does water do in this, what impurity does it get rid of and how?

Mesostillbenedibromide crude with KOH and triethyl glycol in a double elimination to produce Diphenylacetylene. Water is added after the reaction mixture is cooled. Then it is put through vacuum filtration, and further recrystallized with 7:3 etoac:water in a hot water bath and a second vacuum filtration.

Please help! thank u!
