Most enzymes are proteins but a few are catalytic RNA molecules called ribozymes. The shape of the protein gets affected when exposed to heat. They can only function well within a certain temperature and pH range. When exposed to high temperatures these enzymes can become less efficient or even non-working. Therefore, the heat-treated enzyme behaves differently than the non-heated one.
