DESCRIPTION :

Tartrazine is a synthetic lemon yellow azo dye generally used for food colouring. It is basically an organic sodium salt which is the trisodium salt of tartrazine acid.

Chemical formula : C16H9N4Na3O9S2

IUPAC name : Trisodium 5-hydroxy-1-(4-sulfonatophenyl)-4-[(E)-(4-sulfonatophenyl)diazenyl]-1H-Pyrazol-3-carboxylate

Na ooc. Na O₂S

Physical & Chemical Properties :

Form - Powder

Colour - Yellow/orange

Molecular weight - 534.4 g/mol

Melting point - Greater than 572°F

Solubility in water - 20g/100ml at 25°C

Solubility in glycerol - 18g/100ml at 25°C

Solubility in ethanol - 0.8g/100ml at 25°C

UV septra, lambda max - 425nm in water

Other experimental properties - Anionic dye, hygroscopic in nature, when heated to decomposition it emits toxic gases e.g. sulfur, nitrogen and sodium oxide

Applications :

1. Basically used as a colouring agent to give a pleasant lemon yellow colour to food items e.g. desserts and confectionery, beverages, snacks, condiments and spreads etc.

2. Can also be used to develop a number of personal care and cosmetics e.g. liquid and bar soaps, sanitizer, lotions, nail polish, eyeshadow, blush etc.

3. Pharmaceutical products e.g. different kinds of vitamin tablets, antacids etc. may contain tartrazine to give colour.

Effects in a living organism :

1. Tartrazine can cause allergic reaction or intolerance to all of the azo dyes. It basically occurs among asthmatics or persons who suffer from aspirin intolerance.

2. Tartrazine can become the reason of food intolerance and ADHD like behaviour in children

3. Tartrazine is capable of provoking both IgE dependent and IgE non-dependent allergic reactions.

4. Tartrazine can also be a potential cause of articaria in atopic patients

As a whole tartrazine is harmful and it can cause serious damage if consumed on a regular basis.

Environmental Fate :

1. If released to air, tartrazine cam exist solely in particulate phase in the atmosphere since it is an inorganic salt and non-volatile

2. As tartrazine is used as a potential algaecide/herbicide, it will induce its direct release to environment

3. Tartrazine generally remains in the soil in anionic form. And anions do not volatilize. Neither they are adsorbed

4. As tartrazine lacks functional hydrolysis groups, it can not undergo hydrolysis

So, tartrazine is toxic for the environment. And it can react as a serious pollutant if released to the environment and deposited in large scale
