Digestion of fat involves converting dietary fat present in our body into fatty acid and glycerol with the help of an enzyme known as lipase which causes an increase in the hydrogen ion concentration of the surrounding and therefore which causes a drop in ph.

Bile salts are one of the components of bile which are produced in the liver and stored in the gall bladder . Bile salts help in emulsification of fats. It means bile salts break down large fat globules into small micelles of fat in the duodenum so that it becomes easy for the digestive enzymes from pancreas to process them.
