Answer #1

Dinner plan:

Mushroom soup rich in Vitamin B2 and has iron content

Beef liver (rich in B1 and heme-iron) with half bowl of White rice (rich in Vitamin B1)

Followed by a lemon juice (has Vitamin C for better absorption of iron)

a) Heme and non heme iron:

In animal food source iron is attached to a protien called heme (heme iron) whereas the plant source iron is not attached to heme proteins (non-heme iron).

Heme iron are readily absorbed in human digestion and therefore recommended for anemic patients.

Non heme iron are not readily absorbed in comparison with the heme iron source.

Vitamin B1 is Thiamine and Vitamin B2 is Riboflavin

b) Beef liver and mushroom is rich proteins and fat, rice is a good source of carbohydrate.

c) This meal is a balanced food as it has carbohydrate, fat, protein, vitamins and other micro-nutrients like selenium, copper are available in mushroom. Overall it provides most of the essential nutrients required for the body.
